I don’t know about you guys, but ain’t nobody got time to prep and make a cake in the oven these days.  It’s just not going to happen.  Especially in our house.  So I want to show you our sneaky 15 minute cake – a deliciously moist microwave cake.  A chocolate one of course.

I’m not lying to you when I say that I have made this microwave cake around 300 times in my lifetime.  When we were growing up, if we weren’t spontaneously making it after craving something sweet during the week, we were making it on purpose after every Sunday lunch.  It’s the perfect size to demolish the whole thing in one day, so there’s no pesky cake leftovers that you have to eat the next day.  Although, if you’re still craving, it’s pretty easy to make another one!

Plus you could divide it into cups and make individual servings!

How to make our chocolate microwave cake

15 Minute Microwave Chocolate Cake

Print This
Serves: 10-12 Prep Time: 8 minutes Cooking Time: 7 Minutes

Ingredients

  • 3 Tablespoons Cocoa
  • 1 Cup Boiling Water
  • 1 Cup Brown Sugar
  • 1 Cup Flour (Unbleached is better)
  • 4 Teaspoons Baking Powder
  • 1 Pinch Salt
  • 2 Well Beaten Eggs
  • 1/4 Cup Oil
  • 1 Teaspoon Vanilla Essence

Instructions

Step 1: Mix the cocoa and boiling water in a jug.

Step 2: In a separate bowl beat your eggs, then add your oil and vanilla essence.

Step 3: In a third bowl, mix together your remaining dry ingredients.

Step 4: Add the egg mixture to the cocoa mixture and beat.

Step 5: Add the eggy cocoa mix to the dry ingredients and combine thoroughly.

Step 6: Put into a microwaveable dish that has been pre-greased.  Or if you want to throw caution to the wind, use the ice cream bakkie like we did.

Step 7: Put it into your microwave on the normal setting for 7 minutes.

Step 8: Wait for it to cool down before icing.

Step 9: Decorate with your favourite sweeties.

Step 10: Enjoy with your hot cup of coffee or tea.

(Sorry that the bottom thingy is pulling into the recipe there.  I still think this nifty little feature is too cool not to use so I’m going to just breathe through the fact that it’s not working perfectly.)

My real aim here is to do this with the girls often enough so that they eventually learn how to do it all on their own.  That way I can spend Sunday afternoons chilling while they make us cake!  How is that for winning at parenting?!  In fact now that I think about it, that’s exactly what my parents did.  And I loved making those cakes so it was all good.  The only thing we’ll have left to teach them is how to make the perfect cup of coffee and then we can retire from this parenting gig.
